Alliance’s third annual crawfish boil was a memorable celebration filled with great food, teamwork, and community spirit. Held in the parking lot under a shaded canopy, the event brought together members and their families for a relaxed, family-friendly gathering that everyone could enjoy at our Pearland academy.
A Louisiana Tradition Comes to Houston
A huge highlight of the day was the incredible crawfish spread prepared by one of our own Black Belts, Tony Landry. Growing up in Louisiana, Tony brought authentic Southern flavor and tradition straight to Houston. He handled everything himself, boiling crawfish alongside potatoes, sausage links, mushrooms, garlic, corn on the cob, and even orange slices for that extra kick of flavor.


True to his roots, Tony made four batches for the team, starting off with a milder, more approachable spice level before gradually turning up the heat with each round. By the final batch, the seasoned crawfish lovers were in their element, savoring the bold, fiery flavors that only a Louisiana native can deliver. Tony has proudly taken on this role every year, and it has become a cornerstone of the event.
A Spread Built for Sharing
Tony emptied each batch onto a giant round table covered in butcher paper. The aroma of Louisiana spice, garlic, and citrus rolled across the parking lot as members lined up to dig in. There was something almost ceremonial about gathering around the spread — a welcome change of pace from the usual focus of jiu-jitsu and Muay Thai training.


Community Contributions That Made the Day
The event truly reflected the spirit of collaboration, as everyone chipped in to make a successful community event. Cristina Salva contributed homemade sugar cookies and cupcakes, adding a sweet touch to the menu, while her daughter added a personal and creative flair by making the event banner that was displayed over the front desk. Alliance also provided chips and additional cookies, ensuring there was something for everyone to enjoy.


While the outdoor setup hosted the main boil under the canopy, the indoor area was filled with desserts and chips, giving guests a cool place to grab a treat and take a break from the Houston sun. Members also brought ice chests packed with sodas and beer, keeping everyone refreshed throughout the day.

Camp chairs and folding tables lined the academy walkway, and the patio filled up fast as members rotated between the boil and the shade. Kids ran around between bites while parents traded stories from class. The crawfish boil was more than just a meal — adults and kids alike enjoyed socializing, sharing food, and spending quality time together.


Laughter, conversation, and the unmistakable aroma of a Louisiana-style boil filled the air, making it a day to remember.
